Air fryer mini peppers are similar to other easy recipes like roasted beets, air fryer carrots, sweet potato cubes, and potato cubes.
It works well as a side dish to a spicy dal.
You could pack them in a lunch box as a side dish because they taste great, even if it's cold.
The simple seasonings give a unique and lip-smacking roasted pepper you have never tasted.

Ingredients note

- Mini sweet peppers: I bought this at Costco, but it's also fairly common in most grocery stores. Look for the pack with a great color combination.
- Seasonings: I used red chili powder, garam masala powder, and amchur powder. This gives a great balance of flavor and heat that complement the sweetness of peppers.
Instructions
Wash the mini peppers and cut them into halves.
Remove the seeds but leave the stalk on.

In a small mixing bowl, mix together the pepper halves, seasonings, salt, and oil.

Toss them well to get a good coating of seasoning on all the pepper halves

Place the peppers in the air fryer basket in a single layer and air fry at 400F for 12 minutes.
Shake them halfway through, if required.

The peppers are done when they are slightly charred around the edges.
Serve immediately with ranch dressing or your favorite dipping sauce. Enjoy!
Variations
If you want to, you can add other seasonings to the peppers. Some that would be good are:
- cumin powder
- smoked paprika
- oregano
- thyme
- black pepper
- garlic powder
You could add some vegan cheese to the peppers before air frying them. This would make a great appetizer! Just sprinkle some shredded cheese on top of the peppers before air frying.
If you cannot find mini peppers, you can try the same recipe with bell peppers. Just cut them length-wise and brush peppers with the seasoning.
Tips
- You can also roast the peppers in the oven. Preheat your oven to 400F and roast for 15-20 minutes until peppers are slightly charred around the edges.
- I prepared this with the 5 Qt Cosori Air fryer. Be sure to adjust the cooking time if you are using smaller air fryers.
- Store the leftovers in an airtight container in the fridge for up to four days.
- For better taste and flavor, use olive oil or avocado oil during air frying.
- Leaving the stalks on the peppers is handy because they make it easy to grab and enjoy.
