Traditionally, this dish is made by stir-frying the vegetables in oil until they are golden brown and crispy.
However, with the rise in popularity of air fryers, there's now a new and improved way to make this beloved dish - the air fryer aloo gobi.
With this recipe, I share details on how you could prepare this popular indian dish with little oil but still get a texture that's similar to deep frying.
My family enjoyed this popular Indian side dish with a main course of jeera rice and dal tadka. I am confident this would be your best aloo gobi you have ever tasted!

Ingredients
- Cauliflower head, cut into florets
- Potatoes
- onion
- Tomato sauce
- Spices
- kasuri methi

Instructions
Place the cauliflower florets in hot water with a pinch of salt. After 5 minutes, drain and pat them dry with a paper towel.
In a mixing bowl, add the cauliflower florets, cubed potatoes, chopped onions, and drizzle oil on top. Toss everything together so that the vegetables are coated with oil evenly.
After preheating the air fryer at 380°F for about 3 minutes, place all the vegetables in the air fryer basket in a single layer. Cook for 10-12 minutes, shaking the basket every 5 minutes to ensure even cooking.
While the vegetables are cooking, mix spices like coriander powder, cumin seeds or powder, turmeric powder, garam masala, and salt with tomato sauce.
Once the vegetables are cooked, transfer them to a mixing bowl and add the spice.
Toss everything together and fry the vegetables in the air fryer for another 5 minutes to let the spices cook.
Finally, sprinkle some kasuri methi and lime juice on top and serve your delicious air fryer aloo gobi hot with steamed rice, dal, or vegetable curry.
Variations
Tomato sauce - Mix one tablespoon of tomato paste and three tablespoons of water instead of tomato sauce.
Potato - I used russet potato, but you can use Yukon gold or red potatoes.
Red chili powder - Use green chili instead of chili powder.
Top tips
- Don't overcrowd the air fryer basket. Cook the vegetables in batches if needed.
- Adjust the cooking time according to your air fryer model and the size of your vegetables.
- Marinate the vegetables with the spices for 30 minutes before cooking for a more intense flavor.
- Feel free to add other vegetables, like bell peppers or carrots, to the mix.
- Garnish it with chopped coriander leaves for extra flavor and appeal.
- You can add ¼ teaspoon of cumin powder and coriander powder along with the listed ingredients.
Serving suggestion
- With Flatbread: Aloo gobi pairs wonderfully with any Indian flatbread like roti, naan, or paratha. You can also enjoy it with pita bread or tortillas.
- As a Filling: Use the air fryer aloo gobi as a filling for wraps, sandwiches, or stuffed bell peppers for a wholesome meal.
- With Grains: Serve the dish alongside various grains like quinoa, couscous, or bulgur wheat for added texture and nutritive value.
- With a Side Salad: A crunchy, fresh salad can balance out the rich, hearty flavors of the aloo gobi. Try pairing it with a cucumber salad or a simple tomato and onion salad.

Storage
Store any leftovers in an airtight container and refrigerate for up to 3 days. Reheat in the air fryer for 5-7 minutes at 350°F or until heated through. You can freeze the cooked aloo gobi for up to 2 months, but it may lose its crispy texture when reheated.
