Today I am sharing the Instant Pot version of a classic Indian recipe that is very common in households as well as upscale restaurants …Aloo Matar!
I have not received any specific request for this recipe, but I figured a commonplace recipe such as Aloo Matar is something you would never think of preparing with the Instant Pot.
I continue to be amazed at how versatile the Instant Pot is and how it continues to make everyday cooking so much easier. ‘Aloo Matar’ translates to Potatoes and Peas and the dish gets its name based on the prime ingredients. But apart from these two vegetables, there are several other ingredients and a tomato base, that help in creating this wonderful aromatic curry.
Aloo Matar is usually served with roti or rice. Traditionally it is prepared in a saucepan and the potatoes are slow-cooked over the stovetop.
I have prepared the traditional as well as the Instant Pot version and I can say with absolute certainty that the Instant Pot version is the better version. The dish is a lot easier with no compromise in taste or authenticity.
What is Aloo Matar?
Aloo Matar is a Punjabi recipe from India and notably prominent in almost all Indian restaurants. That’s how popular the recipe is among Indian food lovers. After all, the protein and carb combo from peas and potatoes can be quite filling and satisfying.
But the list of vegetables does not have to stop there. You can create subtle variations to the recipe by adding cauliflower florets too (and call it Aloo Matar Gobi!).
A kid-friendly option of this recipe can be prepared by toning down on the spices. If you have ready access to frozen peas, this is a dish that you could prepare any time of the year. My family enjoyed every bite of this recipe and I hope you will too.
Dry Version of Aloo Matar
One other variation of Aloo Matar is to prepare the dry version. To do this, just cook the potatoes and peas in a tomato sauce without adding water. The remainder of the procedure is just the same. The dry version seems to match better for Poori and Roti while the regular version is well paired with rice.
Is Aloo Matar Vegan?
There are several variations posted online that suggest adding cream. But that is not a part of the original version. The authentic aloo recipe needs no cream and is 100% vegan and gluten-free too. Adding cream helps in binding all the flavors together but it is not mandatory.
Instant Pot Aloo Matar Recipe
Here’s my step by step directions with pictures for Instant Pot Aloo Matar recipe. I have shared my video in the recipe box below. With the Instant Pot pressure cooker, you should be able to prepare this recipe in 30 minutes from scratch.
First, you have to press saute then add oil when oil heats up add cumin seeds and saute until it’s sizzling.
Add garlic, ginger and chopped onions and sauté for 2 minutes.
Then add chopped tomatoes, spices and sauté for another 2 minutes. I used chopped tomatoes, but you can also use canned tomatoes too.
Now add green peas, potatoes, salt, and water. Stir and close the instant pot.
Pressure cook for 3 minutes on high pressure.
Wait for NATURAL PRESSURE RELEASE(NPR). Wait for the silver button on the lid to drop before opening the lid.
Open the pot, add lemon juice and sprinkle garam masala on top.
Aloo Matar in a saucepan
Here’s the saucepan version of the same recipe. You can prepare Aloo Matar over the stove using a pan or pot or a pressure cooker. With a pan, drizzle a little bit of oil over medium heat and saute cumin seeds, onion, ginger, and garlic in that order for 3 minutes.
Then add chopped tomatoes and spices and cook for another 2 minutes. Add peas and potatoes and add water and cover the lid and cook for 10 minutes or until potatoes are tender.
Keep stirring in between and remember to add salt and garam masala before serving
Without onion and garlic
If you are looking for a recipe for aloo matar without onion and garlic for any religious reasons, feel free to skip them. Although the sweetness from the onions will be absent, the dish is still delicious and makes a good option for religious fasting days too.

Aloo Matar - Instant Pot Potato & Peas Curry
- Press the ‘saute’ option on Instant Pot and add oil to the inner pot.
- As the oil heats up, add the cumin seeds and saute them until they start to sizzle.
- Add garlic, ginger and chopped onions and sauté for 2 minutes.
- Then add the chopped tomatoes, spices and sauté for another 2 minutes. I used chopped fresh tomatoes, but you could also use canned tomatoes.
- Next, add green peas, potatoes, salt, and water. Stir and close the instant pot.
- Pressure cook for 3 minutes on high pressure and Wait for NATURAL PRESSURE RELEASE(NPR). Wait for the silver button on the lid to drop before opening the lid.
- Add a splash of lemon juice and sprinkle garam masala on top.
- Garnish with cilantro and Aloo Matar is ready!
- Serve it hot paired with steamed rice or Roti.
