This recipe is inspired by my air fryer roasted beetroot and frozen okra in the air fryer.

So it's perfect for busy weeknight meals. All you need is fresh potatoes and a few spices.
Ingredients note

- Potatoes: I used red potatoes for this recipe, but you can use any type of potato that you like. (Yukon golds, and russet potatoes)
- Spices: I used a combination of chili powder, garam masala, and turmeric powder to flavor these potatoes. If you don't have all of these spices on hand, you can use any combination that you like. A dash of black pepper goes a long way in adding flavor.
- Oil: I prefer using extra virgin olive oil to get all the flavors from the potatoes. If you do not have that, vegetable oil is a good substitute.

Step-by-step instructions
Cut the potatoes into small cubes and place them in a large bowl and add cold water just to cover the diced potatoes. Keep it for 10 minutes to remove all the starch.
Drain the water completely and spread the potatoes on a paper towel to remove all the moisture.
Preheat your air fryer to 400 degrees F.

In a small bowl, mix together chili powder, garam masala, turmeric powder, oil, and salt.

Add this spice blend to the potatoes and mix everything together until the potatoes are evenly coated.

Place the potato cubes in the air fryer basket (single layer) and air fry for 15 minutes, or until they are crispy and golden brown.
Crispy air fryer cubed potatoes are ready! Serve immediately with your favorite dipping sauce. Enjoy!
Serving suggestion
I personally like to serve with vegan raita or a side dish for steamed rice and curry pairing.
But you can serve it as a side with just about anything! Try it with grilled veggies, or tofu. You can even add it to your favorite salad for a little extra crunch.
Leftovers
These air fryer potato cubes are best enjoyed fresh, but leftovers will keep in the fridge in an airtight container, for up to four days.
Reheat them in the air fryer or in the oven at 400F until they are crispy and heated thoroughly.
