Why this recipe works
The best way to get a crunchy, deep-fried taste without the calories is by using an air fryer. Plus, air fryer baby carrots are packed with nutrients, so you can feel good about indulging in them.
As a stand-alone recipe, it cannot get simpler than this easy recipe. I'd rate this one as one of the easier air fryer recipes I have tried thus far.
Keep reading for my instructions on how to prepare this cool air fryer baby carrots snack in less time than any other healthy snack you have tried.
This is so much healthier than french fries that could take a longer time to make.
With just 14 minutes of cook time in the air fryer, you'll have delicious and nutritious baby carrots that are perfect for snacking on or adding to your next meal.
There's no need for any sweetener like maple syrup, honey, or brown sugar because the natural sugars in the carrots come out well during the air frying process.
In addition, you can use the same recipe in your air fryer to cook other vegetables like broccoli, cauliflower, asparagus, etc.
So it's perfect for those who are looking for a healthy and convenient way to eat more veggies.

Ingredients note
Baby carrots: I used prewashed organic bag of baby carrots. Regular carrots are also good if you cut them into bite-size pieces with a food processor. For best results, thaw the frozen carrots to room temperature.
Seasoning: Use your favorite spice that you like on sauteed vegetables. I used red chili powder, Italian seasoning, black pepper powder, and salt.
I have seen some recipes calling for garlic powder. I do not recommend that unless you are ready for a strong garlic odor as you cook the carrots.
Oil: You need very little oil for this recipe. However, extra virgin olive oil or avocado oil seemed like the best options in bringing out the best from carrots.
Lemon juice: This is totally optional. Salt and lemon flavor tend to kick up the flavor in air-fried carrots.

Instructions
Place the baby carrots on the paper towel to dry out the moisture.
Next, place the baby carrots inside a mixing bowl and add all the seasonings: Oil, salt, and lemon juice. Give a nice mix.
Preheat the air fryer to 400 degrees F for 4 minutes.
Place the seasoned baby carrots into a single layer inside the air fryer basket and cook for 14 minutes at 400F with a shake reminder halfway through. (spray oil if you desired)
Enjoy your crispy from the outside and tender in the inside baby carrots.
How's that for an easy side dish! I consider this as a perfect side dish for the main course dish such as the dum aloo curry as it balances the spicy notes from the curry.
Other serving options are with a vegan ranch dressing or adding balsamic vinegar as a finishing flavor to roasted carrots.

QUESTION: Are the carrots supposed to be frozen or not for this recipe? (Seventh bullet point under NOTES.)
Just want to thank you for posting your excellent recipes, Uma. I love Indian food and really love being able to make it at home. I also appreciate the way you put the ingredients in gray under a specific instruction, such as the above "one pound baby carrots" under the first line of instruction. That is really helpful, but I've not seen it done elsewhere.
I hope your work for "Simple Sumptuous Cooking" is super rewarding for you - as rewarding as your recipes are for your fans!
