They are so good and so easy to make. All you need is a sweet potato, some oil, and your air fryer.
The great thing about air fryer recipes is that they are usually pretty quick and easy to make.
I find the 'Cosori air fryer' easy to use and clean. I have used it for all my air fryer recipes including air fryer baby carrots, frozen okra, frozen broccoli, and roasted beets.

Sweet potatoes for roasting
There are many different types of sweet potatoes. They all have different tastes and textures.
Most of the time I go for garnet sweet potatoes. This time I got Murasaki Japanese sweet potatoes. A reddish-purple skin with white flesh that turns golden color when cooked.
You could cut them in cubes like I did or Julienne cut them to make sweet potato fries.
Ingredients note
Sweet potato: I used one large sweet potato that amounted to about 4 cups, for this recipe. If you want, you can use two smaller sweet potatoes, but it's important that you only have a single layer inside the air fryer. Be sure to adjust your cook time if your pieces are more than half an inch thick.
Oil: I used avocado oil because it has a high smoke point and it's healthy. You can also use olive oil or any other oil that you like.
Brown sugar: You can use any type of sugar that you like. I used brown sugar because it has a deep flavor.
Spices: I used red chili powder, turmeric, and black pepper powder. feel free to use your own seasonings.

Instructions
Preheat your air fryer to 400 degrees F.
Wash the sweet potato and peel the skin and cut the sweet potatoes into cubes. The size of the cubes doesn't matter too much as long as they are all about the same size so they cook evenly.
Place them in water so that they won't brown and help to remove any excess starch.
Drain the sweet potatoes and pat them dry with a paper towel.
In a large mixing bowl, mix together the sweet potatoes, oil, brown sugar, salt, red chili powder, turmeric powder, and black pepper.
Toss everything together until the sweet potatoes are evenly coated.
Transfer the sweet potatoes to your air fryer basket, making sure they're not crowded. Cook for 8-10 minutes, or until they're crispy and tender.
make sure to shake them a few times during cooking.
