My mom usually prepares this during festivals like Ganesh Chaturthi and Makara Sankranti.

Why this recipe works
The recipe is simple to follow and doesn't require any special ingredients.
Peanut balls are a healthy snack rich in protein and fiber.
If you are familiar with south Indian recipes, you are probably very familiar with Jaggery.
Jaggery is loaded with antioxidants and minerals like zinc and selenium. In mild amounts, it also serves to aid indigestion.
It is filling and satisfying without being heavy.
This snack will give you sustained energy throughout the day.

Ingredients note
- Peanuts: I started with raw peanuts instead of dry roast peanuts. As far as the kind goes, you can use any kind of peanut that you can get.
- Jaggery: You will find these In Indian grocery stores. Look for sealed packs of jaggery blocks or jaggery powder.
Instructions
Place a pan over medium heat and dry roast peanuts.
Roast on low heat for 15- 20 minutes.
Remove them from the pan, and set them aside.
Once they are cooled off, remove the skin of the peanuts by gently rubbing them between your palms.
Place the peanuts on a big plate.
Place the pan over medium flame and add jaggery and water.
Continue to heat as the jaggery melts.
To check the consistency of jaggery, keep a bowl with cold water on the side.
Once the jaggery syrup gets thicker, drop a little syrup into the bowl and try to make a ball with the droplet.
If the ball maintains the form when you drop it on a plate, that means the jaggery syrup is ready.
Switch off the heat, add roasted peanuts to the pan, and mix well.
Let it cool for a minute before making small balls. (wet your palm while making ladoo; this will help get the round shape and relief from the heat.)

Storage
Store this groundnut laddu at room temperature in an airtight container for up to a week.
Variation
If you want to make this Peanut Ladoo recipe more nutritious, you can add some chopped dry fruits to the mixture.
Some good options are almonds, cashews, and raisins. Add ground spices like cardamom powder or nutmeg to the mixture for a flavor boost.
