This is an easy recipe that I made using puff pastry sheets and fresh Gala apples. The filling is a mix of sugar, cinnamon, and a little bit of lemon juice.
These turnovers are best served warm or room temperature with a scoop of vegan vanilla ice cream.

Ingredients note
Apples: You can use any type of apple that you like in this recipe. I used Gala apples because they are my favorite, but feel free to use granny smith apples or even Honeycrisp apples.
Apple turnovers taste good even if the apples are more sour than sweet. So any choice of apple works for this recipe.
Lemon juice: The lemon juice is optional, but I find that it really brings out the flavor of the apples. Apart from that, lemon juice helps to prevent the apples from browning.
Cinnamon: I like to use a lot of cinnamon in my apple pies and turnovers. It's a flavor that complements apples like no other spice. If you are not a big fan of cinnamon, you can reduce the amount that you use in this recipe.
Brown sugar: You can use white sugar in this recipe, but I find that brown sugar gives the filling a richer flavor.
Puff pastry sheets: You can find puff pastry sheets in the frozen section of most grocery stores. I used Pepperidge Farm puff pastry sheets, but feel free to use any brand that you like. You will need two sheets of puff pastry for this recipe.

Instructions
First, wash the apples and de-stem them. Then cut the apples into small bite-sized pieces.
Set the apples aside in a large bowl. ( I peel my apples, but you don't have to. It's up to you.)
In a small bowl, mix together the chopped apples, brown sugar, cinnamon, and lemon juice.
Set the filling aside.
Next, unfold one sheet of puff pastry on a lightly floured surface. Roll the pastry out with a rolling pin to make it thinner.
Then use a knife or pizza cutter to cut the pastry into 4 equal-sized squares. Repeat with the other sheet of puff pastry. You should have a total of eight squares.
Place half of the apple filling in the center of each square. Then fold the pastry over to create a turnover. Use a fork or use a finger to press down on the edges of the turnovers to seal them.
Make sure that they are well-sealed or the filling will leak out while they are cooking. (wet your finger with water while pressing)
Preheat your air fryer to 370 F (medium heat) for at least 3 minutes, or according to the manufacturer's instructions for your particular model.
Place the turnovers in the air fryer basket in a single layer making sure that they are not touching. And spray the tops of the turnovers lightly with cooking spray. (I like to use an olive oil sprayer.)
Then air fry for 10 minutes. Or until the pastry is golden brown and crispy.
Remove from the air fryer and let cool on a cooling rack or parchment paper for a few minutes before serving. Serve with a scoop of vanilla ice cream.
Repeat with all of the remaining puff pastry squares. You should have a total of eight turnovers. Enjoy the best homemade air fryer apple turnovers.
