It is not just a title. I think this is the best sweet plantain recipe that I have seen. Plantains are fairly common in Indian cuisine and I have tried several curries and stir-fries with this superfood, but snacks are a little bit tricky.
The natural sugars in Sweet Plantains can caramelize pretty fast if you chop or slice them too much. Fried sweet plantains are very popular in many parts of the world. This sweet plantain recipe is authentic and delicious with cardamom flavored sugar syrup. Only ripe plantains work best for this recipe.
The best plantains for this recipe are the ones that have darker skins and a tender core. As plantains ripen, the skin darkens and thins and becomes easier to peel, and the fruit inside sweetens and darkens to a light peach color.
The darker they are, the sweeter and less starchy they become, and that is exactly what you want to get for the sweet Plantain recipe. Check out my article on when plantain is ripe?
I have had this snack several times in my childhood and I am still fond of it.
Apart from the plantains, there is the sugar syrup you will need to complement the flavors. Not that sweet plantains need more sweetness, but the syrup is also loaded with cardamom flavor! Cardamoms add flavor to any dish and are especially true for snacks and desserts. You have to try it to experience it.

Being a South Indian, plantains are a major weakness. Kerala has their famous Pazham Pori which are fritters and deep fried, which I love but eat only once a year during my visit. I loved this recipe which is simple and equally loved the caramelisation effect / glaze.
