All you need for this air fryer pumpkin recipe is an air fryer and some seasonings of your choice.

Ingredients note

Pumpkin: I bought a wedge of sweet pumpkin from the store. If you have a whole pumpkin, you can cut it into wedges to handle it easily.
Seasonings: I used a combination of salt, pepper, garlic powder, nutmeg, and cinnamon. Feel free to adjust these to your liking or use whatever you have. A pinch of chili powder would also go a long way in adding a little contrast to the pumpkin flavor.

Instructions
Preheat the air fryer to 380 F.
Clean the pumpkin wedge over cold water and remove all seeds
Peel the skin and cut it into 1” chunks using a sharp knife on a cutting board.

Place the pumpkin chunks in a large bowl and add seasonings: salt and olive oil. Toss well to get an even coat.

Place the pumpkin chunks in the air fryer basket in a single layer and cook for 10-15 minutes, flipping once halfway through.

Once they are done, they should be golden brown and slightly crisp on the outside.
Lay them aside on a wire rack or paper towel to let them cool.
Serve warm with a side of vegan chili to get a perfectly balanced, fall-flavored meal!
Serving suggestions
Serve as is or with a dipping sauce like ranch dressing or jalapeno hummus.
These air fryer roasted pumpkin wedges would also be great on top of a salad or grain bowl.
Serve air fryer pumpkin with another main dish. You could also pair it with soup or chili.
Storage
Leftover roasted pumpkins can be stored in an airtight container in the fridge for up to 2-3 days. Reheat in the air fryer or the oven at 375F until warm.
Tips
- Do not overcrowd the air fryer basket. You may need to adjust the cooking time depending on the size of your air fryer.
- If you want a sweeter version, add a tablespoon or two of maple syrup before cooking.
- Use a thin layer of canned avocado oil or olive oil spray in the air fryer basket to avoid pumpkins getting stuck to the basket.
- You could also add some chopped rosemary or thyme for a savory version.
