    Vegan Oatmeal Cookies

    Today's recipe for Vegan Oatmeal Cookies with Macadamia Milk is no exception. I got this recipe idea from one of my friends, but I made some subtle changes to her recipe by adding whole wheat instead of all purpose flour.

    I am sure you have noticed by now that I have been posting vegan recipes lately. Vegan Chai, Vegan Almond cookies, Vegan tomato jam, and so on. Hailing from an Indian household, it is definitely not an easy transition, but I have managed well thus far and my dishes have not disappointed me or my family 🙂

    Cookie and Oatmeal

    In addition to wheat flour, the creamy macadamia milk and cardamom powder give it a unique taste to the vegan oatmeal cookies. After tasting my vegan cookies, I am never going to go back to store-bought cookies.

    A little extra effort in preparing these vegan cookies is definitely worth it, considering the environmental impact and health benefits it offers.

    How to make this recipe

    Preheat the oven to 350 F. Blend the oats mildly, to form a coarse powder.In a medium mixing bowl, mix all dry ingredients except sugar and mix well. Now, mix the powdered sugar with oil, macadamia milk, and vanilla extract. Mix well.

    Add this to the dry ingredients and continue to knead the dough until it is smooth. Use a cookie scoop to make little dough balls and press down gently to flatten them. Place them onto a baking sheet, spacing them a couple inches apart. Bake for 12-15 minutes, until turns dark brown edges appear. Remove off the heat and let cool.

    That's it! Vegan oatmeal cookies are ready. Serve with a hot frothing cup of Vegan Chai for a memorable experience!

    Ingredients
      

    • 1 cup rolled oats
    • 1 cup + 2 tablespoon whole wheat flour
    • 1 teaspoon baking soda
    • 1 teaspoon vanilla extract
    • ¾ powdered sugar - cane sugar
    • ½ cup olive oil
    • ⅓ cup Macadamia milk or any dairy free milk
    • ½ teaspoon cardamom powder

      I used normal flour, I didn't feel like pulsing the oats so I used oat bran powder instead, and full cream milk instead of macadamia milk and icing sugar which is also powdered sugar. Maybe you want to correct your recipe by stating that you used pulsed granulated sugar and not actually powdered sugar.

      Do you use regular whole wheat flour, or whole wheat pastry flour? My best friend would love this recipe since he loves oatmeal cookies!

        I used both types flour. For this recipe I used whole wheat pastry flour:) this one is my favorite too!

      Hi Uma, I want to make your recipe and before I do that, I want to make sure I know what exactly is powdered sugar? Is it the same as icing sugar, caster sugar or just regular granulated sugar
