My kids enjoyed this oatmeal soup recipe just as much as they liked my butternut squash, vegan mulligawny, and vegetable barley soup.
It's a great way to sneak some extra veggies into their diet. If you have it as a meal substitute, it can also help with weight loss goals.
The cooking time is short, and the ingredients are easily available at grocery stores. There's no reason for you not to try this new way of enjoying a simple soup.

Ingredients
- Rolled Oats
- Mixed Vegetables(frozen) -Go with your favorite vegetables like green beans, carrots, celery, sweet potato, potatoes, green peas, etc.
- Green onions
- Ginger and garlic
- Coconut milk
- Spices - Black pepper, red chili powder, cinnamon powder
- Tomatoes
- Bayleaf

Instructions
Place a pan over medium-high heat and add olive oil. Once hot, add in chopped green onions, ginger, and garlic. Saute until fragrant.
Add chopped tomatoes and saute for a minute. Add rolled oats and saute for 1 minute.
Add mixed vegetables and spices of your choice. Mix well and let it cook for 2-3 minutes over medium heat.
Add 4 cups of water or vegetable broth and bay leaf. Bring to a boil and let it simmer for 10-15 minutes until the vegetables are tender.
Add coconut milk and let it simmer for another 5 minutes.
Serve hot with a sprinkle of green onions or chili flakes on top. Enjoy the warm and comforting flavors of this oatmeal soup filled with vegetables.
Variations
- Steel-cut oats can be used instead of rolled oats. Be sure to soak them for a long time for consistency.
- For a heartier soup, you can add in some cooked or canned beans like chickpeas or black beans.
- Add two green chilies for a spicier kick.
- Add 1 tablespoon of tomato paste for a richer and thicker soup.
Tips
- For a creamier texture, you can blend some or all of the soup before adding coconut milk.
- If you are adding vegetables, be sure to chop them into small pieces to get a uniform consistency.

I have to tell you Uma, when I read your article I actually made it and my mom and I love it! It is a fresh way to have oatmeal other than the regular breakfast style. The flavors work great together and the heat from the ginger and pepper really warm the body. Especially on this cold stormy day in San Diego! One thing I didn't really the recipe mentioning when to put the ginger.. I just put it in with the spices.
