- Fresh Zucchini

- Vegetable broth - water also works
- Cashews
- Garlic
- Herbs
- Nutritional yeast - for a cheesy flavor

Instructions
Turn on the Instant Pot in sauté mode, add olive oil, and add the chopped onions and garlic to the inner pot. Cook until onions are translucent.
Add the zucchini and cook for a few more minutes until it softens.
Add black pepper, nutritional yeast, salt, cashews, and fresh herbs like Italian seasoning. Continue to stir.
Add vegetable stock and mix well. Turn off the sauté mode and close the lid.
Set it on high pressure for 8 minutes. When done, let the pressure release naturally.
Using an immersion blender or regular blender, blend until smooth and creamy.
Serve hot with your choice of toppings like croutons, fresh herbs, or a dollop of vegan sour cream in a warm bread bowl.
Variations
- Instead of cashews, you can add ½ cup of coconut cream.
- Instead of fresh garlic, use ½ teaspoon garlic powder.
- Add cayenne pepper for a little heat.
- Add a teaspoon of lemon juice if the soup is too spicy for your preference.
- Add dry white beans or sweet corn along with other main ingredients for additional body to the soup.

Cool the soup completely and store it in an airtight container in the refrigerator for up to 4 days.

Yes, you can make this zucchini soup on the stovetop as well. Follow the same instructions, but cook the soup for 20 minutes over medium heat until everything is cooked through and soft. Then blend and enjoy!
