Ingredients note

- Zucchini and squash: I got mine from Costco, but you can also get them from your local grocery store or farmer's market. Zucchini season lasts all the way to the late summer months.
- Italian seasoning: You can find this in any grocery store or make your own blend with the herbs you choose, along with garlic powder and onion powder.
- Olive oil: Use good quality extra-virgin olive oil for the best results.
- Black pepper: Freshly ground black pepper is always the best way to get fresh flavors, but you can also use pre-ground pepper.
Instructions
Preheat your air fryer to 400F (200C). Cut the zucchini and squash into ¼-inch thick cubes or slices.

Place them in a large bowl and add the olive oil, Italian seasonings, salt, and black pepper. Toss everything together to make sure it's evenly coated.

Transfer the zucchini and squash to the basket of the air fryer and cook for 10-15 minutes, shaking the basket at the halfway point.
The zucchini and squash are done when they're golden brown and lightly crisp on the outside. Serve hot. Enjoy!
