I used to make this cookie primarily for special occasions, but they have become such a nice treat for pretty much anytime at all, simply because they taste so divine. So much that I do not sprinkle any sugar or frosting and yet the cookie jar is empty in less than 3 days. Crisp, rich, and crumbly is just what a cookie should be.
The ingredient list cannot be any simpler. Do not have Almond flour? Not to worry! Just blend some almonds to fine consistency in a blender and you are good to go! I used Almond flour(superfine) and coconut sugar instead of regular sugar. If you are looking for gift ideas for the upcoming holiday season, try this homemade, healthy, and most importantly easy. Directions:
- Preheat oven to 350 F.
- Mix the dry ingredients in a large bowl.
- Add coconut oil, vanilla essence and coconut sugar and mix well into an even mixture.
- Shape the dough into 1 inch balls, place on a baking sheet with 1" space between each.
- Press down slightly to flatten them a little.
- Bake for 10-12 minutes or until edges appears brown.
- Remove from oven and let them cool before serving.
Almond flour cookies are best served with coffee or hot cocoa mix.
