Vegan Almond CookiesVegan Almond Cookies with 5 Simple Ingredients  make up for this wonderfully rich almond cookies in less than 15 minutes. I used to make these cookies primarily for special occasions, but they have become such a nice treat for pretty much anytime at all, simply because they taste so divine. So much that I do not sprinkle any sugar or frosting and yet the cookie jar is empty in less than 3 days. Crisp, rich and crumbly is just what a cookie should be.

Vegan almond cookiesThe ingredient list cannot be any simpler. Do not have Almond flour? Not to worry! Just blend some almonds to fine consistency in a blender and you are good to go! I used  Almond flour(super fine) and coconut sugar instead of regular sugar. Ingredients:

  • 2 Cups  Almond Flour
  • 4 – 6 Tbsp Coconut Sugar
  • 1 tsp vanilla essence
  • 1/2 cup coconut oil
  • 1/2 tsp baking soda

Directions:

  1. Pre heat oven 350 F.
  2. Mix the dry ingredients in a large bowl.
  3. Add coconut oil, vanilla essence and coconut sugar and mix well into an even mixture.
  4. Shape the dough into 1 inch balls, place on baking sheet with 1″ space between each.
  5. Press down slightly to flatten them a little.
  6. Bake for 10-12 minutes or until edges appear brown.
  7. Remove from oven and let them cool before serving.

Vegan Almond CookiesAlmond cookies are best served with coffee or hot cocoa mix.

Yield: 15- 20 Cookies

  1. These are right up my alley! I make almond flour cookies all the time…my moms recipe super easy and really similar to yours! They’re perfect travel food to get the nuts in!
