Air Fryer method
Start by washing the moong dal in clean water 3-4 times.
Soak them in water overnight or for a minimum of 4 hours.
Drain the water and place it on a kitchen towel or a cotton cloth and allow it to dry completely. (10-15 minutes)
Preheat your air fryer to 380 degrees F.
In a mixing bowl, mix the dry moong dal with olive oil.
Place the dal in the air fryer and roast for 10 minutes, occasionally stirring to ensure even cooking.
Once the dal is crispy and golden brown, remove it from the air fryer and toss it with spice powders.
Spread it on a paper towel and let it cool down

Stovetop method
Soak the yellow moong dal for 2 hours. Drain the water and place it on a dry towel and allow it to dry. After 10 -15 minutes, saute the dal with coconut oil for 30 seconds.
Add turmeric powder, chili powder, and salt, and continue to saute for another 2 minutes. Now, spread them evenly on a big plate and microwave/oven cook for 10 minutes (medium size microwave).
Check the dal often, as it may burn, depending on the size of the microwave.
Turn the heat off when you see a golden texture develop.
Roasted Moong Dal is ready. Serve with hot chai or coffee.
