It is super easy to prepare, and the dish turns out great without much effort! All you need are white rice, scallions, garlic, and oil.
Like Jeera rice, Instant Pot Vegetable Pulao, and coconut rice, this green onion rice (a.k.a scallion rice) is easy and needs only a few ingredients.

Ingredients
- Basmati rice: Go for extra-long basmati rice.
- Scallions/ fresh green onions
- Garlic cloves
- Star anise
- Black pepper
- Avocado oil

Instant Pot method
Press the saute button and add oil to the inner pot.
Add star anise and garlic cloves, and sauté for a few seconds.
Add scallions/green onions, salt, and black pepper mix well
Add the washed and drained rice to the pot. Add water and give it a good mix.
Close the lid and press the manual or pressure cook button on high for 4 minutes.
When cooking is done, let the pressure release naturally (NPR).
Once the pressure is released, open the lid and fluff the rice with a fork.
Serve the scallion rice hot with any curry or dal you choose. Enjoy!
Stovetop method
Cook the rice: Place a large saucepan with 2 cups water, a few pinches of salt, and one teaspoon of oil. Bring it to a boil over medium-high heat.
Add basmati rice and stir to ensure none of the grains are sticking at the bottom.
Cover with a lid and cook on low-medium heat for about 10 minutes.
Once rice is done switch off the heat.
Green onion mix: Heat a medium saucepan with oil; add star anise and garlic cloves. Sauté for a few seconds. Add chopped scallions, salt, and black pepper and mix well.
Add the cooked rice and mix everything together. Enjoy!
Storage
Leftover green onion rice can be stored in the refrigerator in an airtight container for up to 4 days. I suggest you not store the rice overnight because the flavors taste best when it is hot.
Reheat the rice in a pan or microwave before serving.
Substitute
Basmati rice: If you don't have Basmati rice, you can use any long-grain rice like jasmine rice or regular white rice.
Scallions: You can substitute the scallions with spring onions and shallots.
Avocado oil: You can use any oil like olive oil, coconut, vegetable oil, or sunflower oil.
Water: If you want more flavor, replace the water with vegetable broth.
Tips
- Be sure to rinse the basmati rice with cold water until it runs clear before adding it to the Instant Pot/pan.
- Feel free to add some vegetables of your choice for a nutrient boost.
- You can make this recipe spicy by adding red chili flakes.
- Instead of cooking rice in the pan, use a rice cooker(for the stovetop method)
