Ingredients
- Basmati rice: Use any long-grain or medium grain rice of your choice.
- Cabbage: Fresh green cabbage works best for this recipe.
- Diced onions
- Spices: A blend of spices including cumin, turmeric powder, coriander, turmeric, and garam masala gives this dish its authentic Indian taste.
- Green chilies
- Garlic and ginger: Freshly minced garlic and ginger add a burst of flavor to this dish.
- Whole spices: Cinnamon, cardamom, cloves, and cumin seeds add depth to the dish.
- Green peas: These add a pop of color and texture to the dish.
Instant Pot Instructions
Rinse and drain the rice, set aside.
Turn on the Instant Pot to sauté mode and heat olive oil.
Add whole spices (cinnamon, cardamom, cloves and cumin seeds) and sauté until fragrant.
Add diced onions, green chili, minced garlic and ginger. Sauté until onions are translucent. Add the spices, salt and mix well.
Add the green peas and chopped cabbage and sauté for a minute.
Add the rinsed rice and mix well with the spices and vegetables.
Add water, close the lid of the Instant Pot, and set it to manual mode (high pressure) for 5 minutes.
Once done, let it naturally release pressure for 10 minutes. Open the lid carefully and fluff up the cabbage rice with a fork.
Garnish with cilantro and add a few teaspoons of lemon juice. Serve Instant Pot cabbage rice hot with your favorite side dishes, or enjoy it as is!
Tips
- Rinse the rice well before adding it to the Instant Pot to avoid sticking.
- You can add other vegetables, such as red cabbage, carrots, or bell peppers, for added nutrition and flavor.
- Add grated coconuts at the end for a touch of sweetness and texture.
- For an even quicker meal, use pre-shredded cabbage or a bag of coleslaw mix.
- Use a food processor to get evenly shredded cabbage.
Stovetop method using cooked rice
- First, cook the white rice separately and keep it aside.
- Heat oil in a large skillet over medium heat, add whole spices, and sauté until fragrant.
- Add sliced onions, green chili, minced garlic and ginger. Sauté until onions are translucent.
- Add the spices and salt and mix well.
- Add green peas and cabbage and sauté 2-3 minutes or until the cabbage is cooked.
- Add cooked rice and mix well with the spices and vegetables.
- Cook for a few minutes until the rice is heated through.
- Garnish with cilantro and lime juice and serve hot!
How to make cabbage rice in stovetop pressure-cooker?
Follow the same steps as the Instant Pot instructions, but instead of using an Instant Pot, use a stovetop pressure cooker. Cook on high heat for 1 whistle. Then, turn off the heat and let it naturally release pressure before opening the lid.
Serving suggestion
- Pair with vegan raita and aloo matar for a complete meal.
- Serve as a side dish with your favorite Indian curries.
- Enjoy on its own as a light, flavorful lunch.
Storage
Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, microwave or heat on the stovetop until heated through.

- 4 cup cabbage - shredded
- 1 cup green peas - frozen
- 1 onion - diced
