Easy Indian Cabbage Rice Recipe

Instant Pot Instructions

  • Rinse and drain the rice, set aside.
  • Turn on the Instant Pot to sauté mode and heat olive oil.
    3 teaspoon olive oil
  • Add whole spices (cinnamon, cardamom, cloves and cumin seeds) and sauté until fragrant.
    ½ teaspoon cumin seeds, ½ inch cinnamon stick, 2 green cardamom, 4 cloves
  • Add diced onions, green chili, minced garlic and ginger. Sauté until onions are translucent.

  • Add the spices, salt and mix well.
    ⅓ teaspoon turmeric powder, ½ teaspoon garam masala, 1 teaspoon coriander powder, ½ teaspoon cumin powder, salt to taste
  • Add the green peas and chopped cabbage and sauté for a minute.
    4 cup cabbage, 1 cup green peas
  • Add the rinsed rice and mix well with the spices and vegetables.
    2 cup basmati rice
  • Add water, close the lid of the Instant Pot, and set it to manual mode (high pressure) for 5 minutes.

  • Once done, let it naturally release pressure for 10 minutes. Open the lid carefully and fluff up the cabbage rice with a fork. garnish with cilantro and add a few teaspoons of lemon juice.

  • Serve hot with your favorite side dishes or enjoy it as is!

Stovetop method

  • First, cook the white rice separately and keep it aside.
  • Heat oil in a large skillet over medium heat, add whole spices, and sauté until fragrant.
  • Add sliced onions, green chili, minced garlic and ginger. Sauté until onions are translucent.
  • Add the spices and salt and mix well.
  • Add green peas and cabbage and sauté 2-3 minutes or until the cabbage is cooked.
  • Add cooked rice and mix well with the spices and vegetables.
  • Cook for a few minutes until the rice is heated through.
  • Garnish with cilantro and lime juice and serve hot!

Notes

  • Rinse the rice well before adding it to the Instant Pot to avoid sticking.
  • You can add other vegetables such as red cabbage, carrots or bell peppers for added nutrition and flavor.
  • Add grated coconuts at the end for a touch of sweetness and texture.
  • For an even quicker meal, use pre-shredded cabbage or a bag of coleslaw mix.
  • Use a food processor to get evenly shredded cabbage.
