Why this recipe works
These Air Fryer Mini Potatoes are crispy and full of flavor. They make the perfect side dish for any meal.
Cooking baby potatoes in the air fryer is a lot easier than baking. It will require less oil, resulting in a tastier, healthier dish.
The recipe can be done from scratch in less than 30 minutes.
The seasonings are customizable to suit your taste preference if you are not a big fan of what I used.
You cannot go wrong with potatoes...My favorite potato recipes are dum aloo instant pot, spicy potato curry, swiss chard and potatoes, and potato kurma.
Ingredients note

- Baby potatoes: I got these small potatoes from the local market. They are so creamy and delicious. For this recipe, larger potatoes are not a good choice.
- Olive oil: You would need very little oil for this recipe. Any kind of oil is good, but I prefer olive oil or avocado oil.
- Salt: I used Himalayan pink salt, but you can use any type of salt.
- Seasonings: I used dried rosemary leaves, cayenne pepper, amchur powder, and chaat masala. Other choices are fresh rosemary or Italian seasoning.

Instructions
Preheat the air fryer to 400 degrees Fahrenheit.

Cut the baby potatoes in half and place them in a large bowl.

Add all the seasonings together with oil and salt. Mix well to get an even coating.

Place the potato halves into the air fryer basket in a single layer.
Air fry for 15 minutes or until they are fork tender or golden brown and crispy.

Serve the warm air fryer mini potatoes immediately with ketchup or your favorite dipping sauce. Enjoy!
Variation
The choices for seasonings are endless...Some more options are garlic powder, onion powder, or paprika.
Or, you can skip the seasoning and simply toss the potatoes with oil, black pepper, and salt. They will still be delicious!
If you don’t have an air fryer, you can use the same seasoning and bake the potatoes in a conventional oven. Preheat oven to 400F and bake for 20-25 minutes.
Expert tips
- Place the seasoned potatoes inside the preheated basket of the air fryer. This will help them cook evenly.
- Be sure to adjust the cooking time depending on the size of your air fryer. I use a 5 qt air fryer.
- Do not overcrowd the air fryer basket to ensure they turn out crispy.
- You can skip the prep work by using whole baby potatoes, but I halved them. This way, they cook faster and evenly.
- I like to use olive oil or avocado oil when cooking in the air fryer. They have a high smoke point and add a delicious flavor to the potatoes.
- If you want to make it ahead of time, simply season the potatoes and store them in an airtight container in the fridge. Preheat the air fryer when you’re ready to cook, and cook the potatoes according to the recipe instructions.
- If you want extra crispy potatoes, you can coat them with 1 tablespoon of cornstarch before air frying.
