Ingredients note
- Wheat flour: I used whole wheat flour instead of all-purpose flour based on my preference. You can always substitute that with all-purpose flour.
- Chocolate chips: I use vegan chocolate chips to keep the recipe 100% vegan. You can substitute that with any kind you like, but I suggest you try to keep the recipe 100% vegan too.
- Flax meal: This is used as an egg replacer. Chia seeds or ground flaxseeds work equally well.
- Coconut oil: I used refined coconut oil. Other options include unsalted butter, vegan butter, or margarine.
- Sugar: I used a combination of organic white sugar and brown sugar.
Instructions
Preheat the air fryer to 350 F.
Mix the dry ingredients in a large mixing bowl: flour, sugar, baking powder, and salt.
Whisk together the wet ingredients in another bowl: melted coconut oil, flax meal, and vanilla extract.
Slowly add the wet ingredients to the dry ingredients, and mix with a rubber spatula or hand mixer until well combined.
Fold in the chocolate chips.
Use a cookie scoop to scoop the chocolate chip cookie dough balls onto an air fryer basket lined with parchment paper.
Make sure the cookies are spaced out evenly on the sheet.
Air fry for 7-8 minutes, or until golden brown.
Allow at least 10 minutes for the cookies to cool before attempting to remove them from the basket so that they become firm. If you remove them while they are still soft, they will break apart.
Remove from the air fryer and let cool on a cooling rack or a wire rack.
When the cookies have crispy edges, they are ready for storage.
Storage
Cookies can be stored in an airtight container at room temperature for up to one week. Use a plastic wrap over the lid to keep it airtight and fresh for longer.
Reheat in the air fryer for a few seconds before serving.
Kitchen Gadgets
I used a 5-quart Cosori air fryer. You can make this in any air fryer brand, but adjust the cooking time based on the capacity.
I love using regular parchment paper in the air fryer so that cookies do not stick with the basket and are easy to remove.
You can find it in any kitchen store or online. If you don't have parchment paper, you can lightly grease the air fryer basket with oil before adding the cookie dough.
