I make a lot of sweets, mostly because most of the requests I get are for vegan versions of sweets. Today's recipe is one such adaptation of shortbread cookies. Shortbread cookies are typically made white sugar, butter, and flour in varying proportions bound together by eggs. I would like to share the recipe for egg-less, butter-free Vegan Shortbread a.k.a Nan Khatai in India.
Nan Khatai is shortbread cookies popular in India. These egg-less cookies can be easily prepared at home. Given the hardened nature of shortbread cookies, I like to pack them as snacks for my kid's lunch.
If you have an event coming up, this is something you can prepare 2-3 days ahead of time and store in an airtight canister. Vegan Shortbread cookies pair very well with coffee as well. So it is a great afternoon snack!
vegan shortbread cookies - Nankhatai
The list of ingredients is fairly simple and I prepared this in less than 30 minutes. One subtle variation that I made in my recipe is I have replaced half part of all-purpose flour with wheat flour and just a little semolina.
This improves the texture of the cookie and makes them somewhat less brittle. I also added a little bit of cardamom powder for aroma. If you are not a big fan of cardamom, you could perhaps add a teaspoon of cinnamon powder as a replacement. Check my step by step video for more details.

Vegan Shortbread (Nan Khatai) Recipe

Ingredients
- ½ cup whole wheat flour
- ½ cup all purpose flour
- ¼ cup semolina
- ¾ cup coconut unrefined oil
- 1 cup organic powdered sugar
- 1 teaspoon baking soda
- 1 teaspoon cardamom powder
Instructions
- Preheat oven @180 C or 355 F
- Mix sugar and coconut oil in a bowl and keep it aside.
- Mix all the dry ingredients evenly
- Gently add the wet ingredients and mix well.
- Prepare little round balls and place them on a baking tray.
- Gently press the center and garnish it with your favorite nuts (optional)
- Bake for 10- 12 minutes when you start to see golden brown edges.
