Misal Pav recipe is a spicy dish hugely popular in the city of Mumbai. This is a spicy curry dish that is flavored with a combination of several spices and a base of protein-packed Mung beans.

About this recipe
This is one of Indian street food which is spicy and packed with protein.
The high protein nature of the dish also makes it a good replacement for a meal.
The unique taste of the Misal recipe is from the special masala. Although it is available in stores, I have listed the procedure for a simpler but fresh and tasty version of Goda masala.
Before you plan to entertain guests with this misal pav recipe, keep in mind that it takes a little bit of overnight preparation. The Mung beans need to soak for 12 hours and take up to 9 hours for sprouting the whole moong beans before you can start. In the end, you will get a lip-smacking misal recipe. Misal pav can be had as a breakfast, snack or as a brunch. It's a delicious and wholesome meal, especially if you have with the pav (buns)
Ingredients notes
Green gram or whole moong bean- this is the main ingredient for misal recipe. This is also known as mung bean. Make sure to soak and sprout the whole bean before using it in the recipe.
Goda masala - you could use store bought or prepare homemade.
Fried mixture - This is nothing but a mixture of fried indian snacks. Choose your favorite one like bombay mix, south indian mixture, or chivda. I used the store bought.
Step by step method
First, Soak green gram overnight or 8 hours and Drain out the water using a colander and then place the beans on a cheesecloth. Wrap the beans in a cheese cloth and store covered in a cool, dry place away from direct sunlight. I usually keep them in my oven and in winters keep the oven lights on for some warmth. beans will start to sprout in 12 hours. The longer you keep they will continue to grow.
This time I sprouted using an instant pot - Place the soaked and drained whole moong bean inside the food steamer. Then place the food steamer inside the inner pot and close the lid and press the yogurt button. Keep it for 9 hours. You will get the nice sprouted moong beans after 9 hours. The longer you keep they will continue to grow.
Prepare Goda masala
- Dry roast the ingredients separately: 2 tablespoon coriander seed, 1 teaspoon cumin seed, 2-star anise, 1 teaspoon peppercorn, 1 stick cinnamon, 1 bay leaf, 6 cloves, 4 green cardamoms.
- Blend all the spices and the roasted coconut or dry coconut to a fine powder consistency.
- Store it in an airtight container.
Cook the sprouted mung beans - Cook the sprouted green gram with 1 cup water or cover add the water until it covers the sprouted beans in a pressure cooker until 1 whistle over medium heat.
Using Instant Pot - Add the mung bean and pour water until it covers the beans and closes the lid. Press the pressure cook button and press 5 minutes and cook. Once the timer is done. Wait until the pressure is naturally released.
Prepare misal masala - Place a pan with 2 teaspoon vegetable oil over medium heat and saute cumin seeds. When cumin seeds start to sizzle, add grated ginger, chopped garlic, and saute for a minute or so. Add onion and continue to saute until they are transparent. Add tomatoes, after about 30 seconds, add all the spices and stir well. Let it simmer for about 5 minutes with a cover on.
Now add cooked mung beans and stir well. Add 1 cup of water or the broth from green gram and salt and continue to simmer for a minute. Let it boil for 2 minutes and then add lemon juice and chopped cilantro. Switch off the heat. Enjoy the misal pav recipe with pav!

Ingredients
- 1 cup Green gram/ Mung bean

- Salt
