Place a pan or dry skillet over medium heat and dry roast the ingredients: coriander seeds, cumin seeds, fennel seeds, black gram/urad dal, cloves, cardamom, and cinnamon.
Make sure not to burn them; they should release their aroma and lightly change in color.
Set it aside and let it cool.
Add one teaspoon of oil and red chilies to the pan over medium-low heat and toast for a minute or until they crisp up. Switch off the heat.
Grind all roasted spices in a coffee grinder or a mortar and pestle until they form a fine powder.
