Ingredients note
- Air-fried falafel: Check out my recipe for air-fried falafel.
- Coconut milk: Use fresh or canned coconut milk for a creamy texture. This is better than using coconut milk from a carton due to its creamy nature.
- Spices: I used fresh curry powder. You can substitute with cumin, coriander, chili powder, turmeric, and garam masala for a flavorful kick.
Instructions
Place a pan over medium heat. Once hot, add olive oil and heat until it starts to shimmer.
Add the cumin seeds and chopped garlic. Cook for a couple of minutes until fragrant.
Add the tomato purée and curry powder. Lower the heat to low and let simmer for 10 minutes until thickening.
Add a hint of chili powder if you prefer a spicy sauce
Add the canned coconut milk and air-fried crispy falafel. Bring to a simmer and cook for an additional 5- 8 minutes.
Adjust seasoning with salt and pepper if needed.
Garnish with fresh coriander leaves, if desired.
Serve the vegan falafel curry over basmati rice or naan. Enjoy!
