Vegan Avocado Mousse

Today I go from a hot and savory snack recipe to a cold and creamy dessert. As the days are getting hotter, it is natural to go for a cold dessert and today's Vegan Avocado Mousse will make you go back to it time and again.
A mousse is a soft prepared food with micro air bubbles to give it a light and airy texture. It is usually prepared with heavy cream and ingredients for flavor, taste. Chocolate Mousse is probably the most common. Today's recipe breathes fresh air into this recipe with bright green color and creamy coconut flavor that is truly unique to a mousse.
Since this happens to be the peak of the avocado season, you have got to try this today. Apart from avocados, there are just three other ingredients required to prepare this.
There is no cooking or baking necessary. Preparation takes less than 20 minutes. Just refrigerate it for a couple of hours and you have a wonderfully creamy dessert!
I drizzled the mousse with chocolate syrup just before serving or you could also garnish it with a slice of strawberry. That part is really up to you...As you prepare this, be sure not to leave the mousse in the refrigerator for more than 4 hours as avocados tend to oxidize over time.
My family loved this new found dessert and not leaving it for more than a couple of hours was not a problem around here.

Vegan Avocado Mousse

Ingredients
- 6-7 medium size avocados
- 2 tablespoon coconut cream or use top layer of coconut milk
- 2 tablespoon powdered sugar or Agave syrup
- 1 teaspoon lemon juice
Instructions
- Mash the avocados and whisk them until all the lumps are gone.
- Add coconut cream and sugar and continue to whisk until it is creamy.
- Refrigerate the bowl of mousse for 1-2 hours.
- Vegan Avocado Mousse is ready! Drizzle chocolate syrup or chocolate shavings and serve cold!
