Ingredients note
- Avocados: Use ripe ones that are easier to mash than firm avocados.
- Pasta: I used ‘Gemelli’ pasta for this recipe, but you could use different kinds of pasta too such as penne or fusilli.
- Plant-based milk: Almond milk or oat milk work equally well to act as a milky base for avocados.
- Lemon juice: Lemon or lime juice helps in balancing taste as well as keeping avocados from browning.
- Olive Oil: Extra virgin olive oil is the best option compared to all other options as it brings out the best from herbs such as garlic, and fresh basil.
- Seasoning: Cayenne pepper, salt, ground black pepper for seasoning.
- Nutritional yeast: This helps in bringing the cheesy flavor and creaminess too. And vegan substitute for parmesan cheese.
- Basil leaves: Use fresh basil leaves instead of packaged basil flakes or dried leaves. The flavors from fresh basil leaves are a big part of the experience.
- Garlic cloves: Use raw garlic cloves or garlic powder.

Frequently asked questions
If there's any exposed avocado that hasn't mixed well, it will turn brown. Try adding some lemon juice or vinegar to the avocado before you mix it in to protect it from browning.
Penne and fusilli are good substitutes.
Gemelli pasta looks like two strands of spaghetti twisted together.
Most grocery stores stock them. I got mine from Costco.
Recipe variations
- Use gluten-free pasta to make this vegan avocado pasta gluten-free.
- Add a veggie to your avocado pasta by stirring in steamed, roasted, or sautéed veggies of choice – peppers, spinach, and carrots are all popular choices.
- Try adding a different herb to your vegan avocado pasta – parsley, basil, and oregano all work great! If you're a cilantro lover, give it a try with that too.
How to store leftover avocado pasta
Avocado pasta is best eaten within a few hours of preparation because the avocado pasta sauce could start to turn brown if left overnight. But it would still be good, nonetheless. Covering the avocado pasta and storing it in an airtight container should keep it fresh for several days.
