Close up of vegan avocado pasta with cherry tomatoes on top.

Calling all avocado lovers! Wake up your taste buds with this creamy avocado pasta recipe prepared with all vegan ingredients.

An easy pasta recipe such as this one is a great option for dinner and sure to please anyone at the end of a long day at work.

What makes it unique is that it's a fresh new take on cooked pasta without using store-bought sauce or pine nuts. This turned out to be another kid-favorite recipe.

I added a few red pepper flakes to suit my taste.

A little bit of fresh garlic, avocados, fresh herbs, nutritional yeast as the main ingredients and 15 minutes of cooking time is all it took to prepare this vegan avocado pasta.

I love using avocados because they are naturally creamy with heart-healthy fats and make an easy option for creamy pasta without any dairy or nut-based ingredients.

You can change up the herbs depending on what you have available.

Even picky eaters will love this one! It has a delicious lemony flavor, and if you add fresh basil it tastes like creamy pesto pasta!

I make this often with and without basil, though, as it’s so tasty either way!

When it comes to an option for a pasta dish, my family never turns it down. If we have that in common, check out my other fusion pasta recipe prepared with Indian spices…Tikka Masala Pasta!

    Ingredients note

Ingredients to make avocado pasta are on the table.
Ingredients to make vegan avocado pasta
    • Avocados: Use ripe ones that are easier to mash than firm avocados.
    • Pasta: I used ‘Gemelli’ pasta for this recipe, but you could use different kinds of pasta too such as penne or fusilli.
    • Plant-based milk: Almond milk or oat milk work equally well to act as a milky base for avocados.
    • Lemon juice: Lemon or lime juice helps in balancing taste as well as keeping avocados from browning.
    • Olive Oil: Extra virgin olive oil is the best option compared to all other options as it brings out the best from herbs such as garlic, and fresh basil.
    • Seasoning: Cayenne pepper, salt, ground black pepper for seasoning.
    • Nutritional yeast: This helps in bringing the cheesy flavor and creaminess too. And vegan substitute for parmesan cheese.
    • Basil leaves: Use fresh basil leaves instead of packaged basil flakes or dried leaves. The flavors from fresh basil leaves are a big part of the experience.
    • Garlic cloves: Use raw garlic cloves or garlic powder.

    How to make this recipe

Cook your pasta according to the package instructions. Just before draining the pasta, reserve ¼ cup of the pasta water and set it aside.

A blender is with avocado pasta ingredients.

Prepare avocado pasta sauce: Put everything listed in the ingredients list into the blender or food processor.

Mix well and top with cherry tomatoes and chilli flakes (if you desire), and enjoy!

    Tips

    • When you chop the avocados, place them in a bowl with lemon juice or vinegar. This will help prevent browning.
    •  Mix in some nutritional yeast for an extra cheesy flavor!
    •  You can use frozen corn for this recipe to bring in a sweet note but be sure to thaw it out first!
    • Use any type of pasta like penne, spaghetti, fusilli. Gluten-free pasta is also a great fit for this recipe.
    • You can also top with roasted cherry tomatoes and seeds.

    Frequently asked questions

When I made my pasta, why did some of the avocados turn brown?

If there's any exposed avocado that hasn't mixed well, it will turn brown. Try adding some lemon juice or vinegar to the avocado before you mix it in to protect it from browning.

What can I use instead of Gemelli pasta?

Penne and fusilli are good substitutes.

What does Gemelli pasta look like?

Gemelli pasta looks like two strands of spaghetti twisted together.

Where can I get Gemelli pasta?

Most grocery stores stock them. I got mine from Costco.

    Recipe variations

    • Use gluten-free pasta to make this vegan avocado pasta gluten-free.
    • Add a veggie to your avocado pasta by stirring in steamed, roasted, or sautéed veggies of choice – peppers, spinach, and carrots are all popular choices.
    • Try adding a different herb to your vegan avocado pasta – parsley, basil, and oregano all work great! If you're a cilantro lover, give it a try with that too.

How to store leftover avocado pasta

Avocado pasta is best eaten within a few hours of preparation because the avocado pasta sauce could start to turn brown if left overnight. But it would still be good, nonetheless. Covering the avocado pasta and storing it in an airtight container should keep it fresh for several days.
