Pineapple Fried Quinoa

Ingredients

  • 1 ½ cup Quinoa
  • 2 cups water
  • 2 tablespoon oil
  • 2 garlic cloves chopped
  • ½ cup chopped onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 cups chopped pineapple
  • 2 tablespoon soy sauce
  • 1 tablespoon red chili sauce
  • Salt to taste
  • ½ teaspoon red chili powder
  • ½ teaspoon ginger powder or use 1 teaspoon grated fresh ginger
  • ½ teaspoon black pepper powder
  • ¼ teaspoon paprika or red chili powder
  • 2 tablespoon roasted cashews

Instructions

Cook Quinoa

  • First, cook the quinoa according to package instructions.
  • Or cook in an instant pot: Add rinsed and drained quinoa and water inside the inner pot and close the lid. Set the valve to sealing position. Cook on high pressure for 3 -4 minutes followed by a natural release of pressure for ten minutes.
    1 ½ cup Quinoa, 2 cups water
  • Once the quinoa is cooked, fluff it with a fork and set it aside. (check above for step by step pictures with instructions)

Make Pineapple Quinoa

  • In a large skillet or vessel, add oil and chopped garlic, and onions, and cook on medium heat until onions are translucent.
    2 tablespoon oil, 2 garlic cloves chopped, ½ cup chopped onion
  • Add chopped yellow and red bell pepper and saute for 1 minute. And add salt and spices. Mix well.
    1 red bell pepper, 1 yellow bell pepper, ½ teaspoon red chili powder, ½ teaspoon ginger powder, ½ teaspoon black pepper powder, ¼ teaspoon paprika or red chili powder
  • Add red chili sauce, soy sauce, and chopped pineapple and mix well. (check above for step by step pictures with instructions)
    2 tablespoon soy sauce, 1 tablespoon red chili sauce, 2 cups chopped pineapple
  • Cook for 2 minutes, then add the cooked quinoa and mix well.
  • Cook for a minute and turn off the heat. And garnish with cilantro and roasted cashews. Serve immediately. Enjoy!
