Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan with oil and dust with flour.
In a large bowl, mix the dry ingredients: flour, baking soda, and salt.

In a separate bowl, whisk together the ripe mangoes, oil, flax meal egg, sugar, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until everything is well combined.
2 cups chopped Mangoes, ¾ cup organic sugar, 3 flax egg, 1 teaspoon vanilla essence, ¼ cup grated coconut, 1 cup coconut oil, ½ cup brown sugar
Next, pour the batter into a greased and floured loaf pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
