Sweet Potato Gulab Jamun
These sweet potato gulab jamun is fried and soaked in rose scented syrup. This recipe is great for a vegan variation on gulab jamun.

- 2 cups water
- 2 cups granulated sugar
- ¼ teaspoon rose flavor
- 1 cup mashed sweet potato
- 2 tablespoon all purpose flour
- 2 teaspoon semolina optional
- ¼ teaspoon salt
Prepare sugar syrup by boiling 2 cups of sugar in 2 cups of water until it gets thick and syrupy.
Add ¼ teaspoon of rose flavor (essence) and set it aside.
Boil the sweet potato, peel the skin and mash well to get rid of all lumps.
Now, mix all the ingredients (Flour, Sugar, semolina and salt) and make small balls.
Deep fry the small balls to golden brown.
Place them in the syrup.
Rest them for 30 minutes and Sweet Potato Gulab Jamun is ready to serve
