Ingredients

  • 1 cup rolled oats
  • ½ cup green onions chopped
  • 1 tomato chopped
  • 3 garlic clove chopped
  • 1 teaspoon ginger grated
  • ½ teaspoon black pepper powder
  • 1 teaspoon red chili powder
  • ½ teaspoon cinnamon powder
  • 1 bay leaf
  • Salt to taste
  • 4 cup water
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • ½ cup mixed vegetables frozen

Instructions

  • Place a pan over medium-high heat and add olive oil. Once hot, add in chopped green onions, ginger, and garlic. Saute until fragrant.

  • Add Chopped tomatoes and saute for a minute. Add rolled oats and saute for 1 minute.

  • Add mixed vegetables and spices of your choice. Mix well and let it cook for 2-3 minutes over medium heat.
    ½ teaspoon black pepper powder, 1 teaspoon red chili powder, ½ teaspoon cinnamon powder, 1 bay leaf, ½ cup mixed vegetables, Salt to taste
  • Add water or vegetable broth and bay leaf. Bring to a boil and let it simmer for 15 minutes until the vegetables are tender.
    Add coconut milk and let it simmer for another 5 minutes.
    4 cup water, 1 cup coconut milk
  • Serve hot with a sprinkle of green onions or chili flakes on top. Enjoy the warm and comforting flavors of this oatmeal soup filled with vegetables.

Notes

    • For a creamier texture, you can blend some or all of the soup before adding coconut milk.
    • If you are adding vegetables, be sure to chop them into small pieces to get a uniform consistency.
