Vegan Falafel Curry

  • Place a pan over medium heat. Once hot, add olive oil and heat until it starts to shimmer.
    2 teaspoon olive oil
  • Add the cumin seeds and chopped garlic. Cook for a couple of minutes until fragrant.

  • Add the tomato purée and curry powder. Lower the heat to low and let simmer for 10 minutes until thickening.
    2 cups tomato puree, 1 ½ teaspoon curry powder
  • Add a hint of chili powder if you prefer a spicy sauce
  • Add the canned coconut milk and air-fried crispy falafel. Bring to a simmer and cook for an additional 5- 8 minutes.
    1 can coconut milk, 15- 18 falafel
  • Garnish with fresh coriander leaves, if desired.
    2 teaspoon cilantro
  • Serve the vegan falafel curry over basmati rice or naan. Enjoy!

  • Air-fry your falafels for a healthier alternative to deep-frying.
  • For a richer flavor, you can add more spices like cumin and coriander.
  • Use cashew paste or cream for a richer and creamier texture.
  • Feel free to add vegetables for a more filling dish.
