Vegan Oatmeal Cookies

Today's recipe for Vegan Oatmeal Cookies with Macadamia Milk is no exception. I got this recipe idea from one of my friends, but I made some subtle changes to her recipe by adding whole wheat instead of all-purpose flour.

  • 1 cup rolled oats
  • 1 cup + 2 tablespoon whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ¾ powdered sugar cane sugar
  • ½ cup olive oil
  • cup Macadamia milk or any dairy free milk
  • ½ teaspoon cardamom powder


  • Preheat the oven to 350F.
  • Blend the oats mildly, to form a coarse powder.
  • In a medium mixing bowl, mix all dry ingredients except sugar and mix well.
  • Now, mix the powdered sugar with oil, macadamia milk, and vanilla extract. Mix well.
  • Add this to the dry ingredients and continue to knead the dough until it is smooth.
  • Use a cookie scoop to make little dough balls and press down gently to flatten them.
  • Place them onto a baking sheet, spacing them a couple inches apart.
  • Bake for 12-15 minutes, until turns dark brown edges appear. Remove off the heat and let cool.
