Vegan Oatmeal Cookies
Today's recipe for Vegan Oatmeal Cookies with Macadamia Milk is no exception. I got this recipe idea from one of my friends, but I made some subtle changes to her recipe by adding whole wheat instead of all-purpose flour.
Servings: 20 Cookies
- 1 cup rolled oats
- 1 cup + 2 tablespoon whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ¾ powdered sugar cane sugar
- ½ cup olive oil
- ⅓ cup Macadamia milk or any dairy free milk
- ½ teaspoon cardamom powder
Preheat the oven to 350F.
Blend the oats mildly, to form a coarse powder.
In a medium mixing bowl, mix all dry ingredients except sugar and mix well.
Now, mix the powdered sugar with oil, macadamia milk, and vanilla extract. Mix well.
Add this to the dry ingredients and continue to knead the dough until it is smooth.
Use a cookie scoop to make little dough balls and press down gently to flatten them.
Place them onto a baking sheet, spacing them a couple inches apart.
Bake for 12-15 minutes, until turns dark brown edges appear. Remove off the heat and let cool.
