Rice Halbai- Rice Cake Recipe

Ingredients

Dosa rice or any long grain rice.
1
cup
grated coconut
1 ½
cup
grated jaggery
1
tablespoon
ghee/ clarified butter
¼
teaspoon
salt
Instructions
Grind the soaked rice, grated coconut, jaggery all together with 2 cups water.
Place a vessel over medium heat, cook the ground batter.
Continue to mix and cook until the batter gets thick enough like I show in this video. Add water, if it gets too difficult to mix.
Add 2 tablespoon ghee and continue to mix well.
Remove off the heat and pour it onto to a greased pan and let it cool.
When it is warm enough to handle, cut them into 2"squares.
Notes
Rice should be soaked 1 to 2 hours.
