Rice Halbai- Rice Cake Recipe

Ingredients

  • 2 cups Dosa rice or any long grain rice.
  • 1 cup grated coconut
  • 1 ½ cup grated jaggery
  • 1 tablespoon ghee/ clarified butter
  • ¼ teaspoon salt

Instructions

  • Grind the soaked rice, grated coconut, jaggery all together with 2 cups water.
  • Place a vessel over medium heat, cook the ground batter.
  • Continue to mix and cook until the batter gets thick enough like I show in this video. Add water, if it gets too difficult to mix.
  • Add 2 tablespoon ghee and continue to mix well.
  • Remove off the heat and pour it onto to a greased pan and let it cool.
  • When it is warm enough to handle, cut them into 2"squares.

Notes

Rice should be soaked 1 to 2 hours.
