Place the cauliflower florets in hot water with a pinch of salt. After 5 minutes, drain and pat them dry with a paper towel.

In a mixing bowl, add the cauliflower florets, cubed potatoes, chopped onions, and drizzle oil on top. Toss everything together so that the vegetables are coated with oil evenly.

After preheating the air fryer at 380°F for about 3 minutes, place all the vegetables in the air fryer basket in a single layer. Cook for 10-15 minutes, shaking the basket every 5 minutes to ensure even cooking.
While the vegetables are cooking, mix spices like coriander powder, cumin seeds or powder, turmeric powder, garam masala, and salt with tomato sauce.

Once the vegetables are cooked, transfer them to a mixing bowl and add the spice. Toss everything together and fry the vegetables in the air fryer for another 8 minutes to let the spices cook.
Finally, sprinkle some kasuri methi and lime juice on top and serve your delicious air fryer aloo gobi hot with steamed rice, dal, or vegetable curry.
