  • Place a pan or dry skillet over medium heat and dry roast the ingredients. Make sure not to burn them; they should release their aroma and lightly change in color. Set it aside and let it cool.
    3 tablespoon coriander seeds, 1 tablespoon cumin seeds, 1 teaspoon urad dal, ¼ teaspoon fenugreek seeds, 5 green cardamom, 8 cloves, 1 inch cinnamon
  • Add one teaspoon of oil and red chilies to the pan over medium-low heat and toast for a minute or until they crisp up. Switch off the heat.
    15- 20 red chilies
  • Grind all roasted spices in a coffee grinder or a mortar and pestle until they form a fine powder. Mix with ginger and turmeric powder. This process intensifies the flavors and creates a more vibrant color.
    2 teaspoon ginger powder, 1 teaspoon turmeric powder
  • Give a nice stir and let it cool completely. Store in an air-tight container.
