Wash and grate the zucchini with a food processor into a large bowl. Squeeze out the excess liquid with a cheesecloth, paper towel, or clean kitchen towel.

Add chickpea flour, rice flour, nutritional yeast, and spices. Mix until everything is well combined.

Form the mixture into patties by hand or with an ice cream scoop (for best results).
Place the patties in your preheated air fryer basket in a single layer. Coat them with a thin layer of cooking spray (olive oil).

Air fry at 380°F for 15 minutes, flipping the zucchini fritters halfway through.
