Vegan Shortbread (Nan Khatai) Recipe

Nan Khatai is shortbread cookies popular in India. These egg-less cookies can be easily prepared at home.

  • ½ cup whole wheat flour
  • ½ cup all purpose flour
  • ¼ cup semolina
  • ¾ cup coconut unrefined oil
  • 1 cup organic powdered sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cardamom powder


  • Preheat oven @180 C or 355 F
  • Mix sugar and coconut oil in a bowl and keep it aside.
  • Mix all the dry ingredients evenly
  • Gently add the wet ingredients and mix well.
  • Prepare little round balls and place them on a baking tray.
  • Gently press the center and garnish it with your favorite nuts (optional)
  • Bake for 10- 12 minutes when you start to see golden brown edges.

This time I did not add any pistachios in the center of biscuits.
