Vegan Shortbread (Nan Khatai) Recipe
Nan Khatai is shortbread cookies popular in India. These egg-less cookies can be easily prepared at home.
Servings: 20 Nan khatai
- ½ cup whole wheat flour
- ½ cup all purpose flour
- ¼ cup semolina
- ¾ cup coconut unrefined oil
- 1 cup organic powdered sugar
- 1 teaspoon baking soda
- 1 teaspoon cardamom powder
Preheat oven @180 C or 355 F
Mix sugar and coconut oil in a bowl and keep it aside.
Mix all the dry ingredients evenly
Gently add the wet ingredients and mix well.
Prepare little round balls and place them on a baking tray.
Gently press the center and garnish it with your favorite nuts (optional)
Bake for 10- 12 minutes when you start to see golden brown edges.

This time I did not add any pistachios in the center of biscuits.
