Almond Butter Muffins
Today's recipe is a special muffin that needs no oil or dairy and yet as delicate as any muffin you have ever tasted.
Servings: 12 muffins
- 1 ½ cup whole wheat flour
- 1 cup applesauce
- ⅓ cup almond butter
- 1 teaspoon almond essence
- 7 tablespoon brown sugar
- ½ cup soy milk or nondairy milk
- 1 teaspoon baking soda
- 2-3 tablespoon dark chocolate chips
Preheat oven to 375 F
Mix all wet ingredients in a medium size bowl and add brown sugar. Mix well
In a different bowl, add whole wheat flour and baking soda. Mix well and then add in the wet ingredients.
Pour the batter in muffin baking tray.
Sprinkle dark chocolate chips on the muffin tops.
Bake for 15- 20 minutes. Or until a toothpick comes out clean.
