Almond Butter Muffins 

Today's recipe is a special muffin that needs no oil or dairy and yet as delicate as any muffin you have ever tasted.

  • 1 ½ cup whole wheat flour
  • 1 cup applesauce
  • cup almond butter
  • 1 teaspoon almond essence
  • 7 tablespoon brown sugar
  • ½ cup soy milk or nondairy milk
  • 1 teaspoon baking soda
  • 2-3 tablespoon dark chocolate chips


  • Preheat oven to 375 F
  • Mix all wet ingredients in a medium size bowl and add brown sugar. Mix well
  • In a different bowl, add whole wheat flour and baking soda. Mix well and then add in the wet ingredients.
  • Pour the batter in muffin baking tray.
  • Sprinkle dark chocolate chips on the muffin tops.
  • Bake for 15- 20 minutes. Or until a toothpick comes out clean.
