Misal Pav Recipe

Misal Pav Recipe is usually paired with Pav (Indian bread roll) but it can also be topped with fresh onions and cilantro.

Ingredients

  • 1 cup Green gram/ Mung bean
  • 1 cup onions
  • 1 teaspoon cumin seeds
  • 2 garlic cloves
  • ½ cup tomatoes
  • ½ teaspoon turmeric powder
  • ½ cup spicy mixture(Indian fried snack) optional
  • 1 teaspoon red chili powder (adjust to your spicy level)
  • 1-2 tablespoon Goda Masala
  • ½ teaspoon Garam Masala
  • 1 cup water
  • 1 teaspoon lemon juice
  • 2 teaspoon grated ginger
  • 2 tablespoon oil
  • Salt
  • 1 tablespoon chopped cilantro

Instructions

Prepare Goda masala

  • Dry roast the ingredients separately: 2 tablespoon coriander seed, 1 teaspoon cumin seed, 2-star anise, 1 teaspoon peppercorn, 1 stick cinnamon, 1 bay leaf, 6 cloves, 4 green cardamoms.
  • Blend all the spices and the roasted coconut or dry coconut to a fine powder consistency.
  • Store it in an airtight container.

Cook the sprouted mung beans

  • Cook the sprouted green gram with 1 cup water or cover add the water until it covers the sprouted beans in a pressure cooker until 1 whistle over medium heat.
  • Using Instant Pot - Add the mung bean and pour water until it covers the beans and closes the lid. Press the pressure cook button and press 5 minutes and cook. Once the timer is done. Wait until the pressure is naturally released.

Prepare misal masala

  • Place a pan with 2 teaspoon vegetable oil over medium heat and saute cumin seeds. When cumin seeds start to sizzle, add grated ginger, chopped garlic, and saute for a minute or so. Add onion and continue to saute until they are transparent.
  • Add tomatoes, after about 30 seconds, add all the spices and stir well. Let it simmer for about 5 minutes with a cover on.
  • Now add cooked mung beans and stir well. Add 1 cup of water or the broth from green gram and salt and continue to simmer for a minute. Let it boil for 2 minutes and then add lemon juice. Switch off the heat.

Notes

  • My recipe is prepared with moong beans but the traditional version of misal curry is always prepared with moth beans.
  • Curry can also be prepared with a combination of sprouts including, mung, peas, moth
  • Use leftover curry with steamed rice and chapati
  • If you are not able to find goda masala or no time prepare homemade then substitute with garam masala
How to sprout the moong bean?
First, Soak green gram overnight or 8 hours and drain out the water using a colander.
This time I sprouted using an instant pot. - Place the soaked and drained whole moong bean inside the food steamer. Then place the food steamer inside the inner pot and close the lid and press the yogurt button. Keep it for 9 hours. You will get the nice sprouted moong beans after 9 hours. The longer you keep they will continue to grow.
