Sweet Potato Gulab Jamun

These sweet potato gulab jamun is fried and soaked in rose scented syrup. This recipe is great for a vegan variation on gulab jamun.

Ingredients

  • 2 cups water
  • 2 cups granulated sugar
  • ¼ teaspoon rose flavor
  • 1 cup mashed sweet potato
  • 2 tablespoon all purpose flour
  • 2 teaspoon semolina optional
  • ¼ teaspoon salt

Instructions

  • Prepare sugar syrup by boiling 2 cups of sugar in 2 cups of water until it gets thick and syrupy.
  • Add ¼ teaspoon of rose flavor (essence) and set it aside.
  • Boil the sweet potato, peel the skin and mash well to get rid of all lumps.
  • Now, mix all the ingredients (Flour, Sugar, semolina and salt) and make small balls.
  • Deep fry the small balls to golden brown.
  • Place them in the syrup.
  • Rest them for 30 minutes and Sweet Potato Gulab Jamun is ready to serve
