Preheat the air fryer to 350 F.
Mix the dry ingredients in a large mixing bowl: flour, sugar, baking soda, and salt.
2 cups whole wheat flour, ¾ cup brown sugar, 1 teaspoon baking soda, ¾ cup organic sugar
Whisk together the wet ingredients in another bowl: melted coconut oil, flax eggs(mix flax meal and water), and vanilla extract.
1 cup refined coconut oil, 1 tablespoon flax meal, 3 tablespoon water, 2 teaspoon vanilla extract
Slowly add the wet ingredients to the dry ingredients, and mix with a rubber spatula, until well combined.
Fold in the chocolate chips.
1 cup vegan chocolate chip
Use a cookie scoop to scoop the chocolate chip cookie dough balls onto an air fryer basket lined with parchment paper.
Make sure the cookies are spaced out evenly on the sheet.
Air fry for 7-8 minutes, or until golden brown.
Allow at least 10 minutes for the cookies to cool before attempting to remove them from the basket so that they become firm. If you remove them while they are still soft, they will break apart.
Remove from the air fryer and let cool on a cooling rack or a wire rack.
When the cookies have crispy edges, they are ready for storage.
