Ingredients

  • 2 cups whole wheat flour
  • 1 cup refined coconut oil
  • 1 tablespoon flax meal
  • 3 tablespoon water
  • 2 teaspoon vanilla extract
  • ¾ cup brown sugar
  • ¾ cup organic sugar
  • 1 teaspoon baking soda
  • 1 cup vegan chocolate chip

Instructions

  • Preheat the air fryer to 350 F.
  • Mix the dry ingredients in a large mixing bowl: flour, sugar, baking soda, and salt.
2 cups whole wheat flour, ¾ cup brown sugar, 1 teaspoon baking soda, ¾ cup organic sugar
  • Whisk together the wet ingredients in another bowl: melted coconut oil, flax eggs(mix flax meal and water), and vanilla extract.
1 cup refined coconut oil, 1 tablespoon flax meal, 3 tablespoon water, 2 teaspoon vanilla extract
  • Slowly add the wet ingredients to the dry ingredients, and mix with a rubber spatula, until well combined.
  • Fold in the chocolate chips.
    1 cup vegan chocolate chip
  • Use a cookie scoop to scoop the chocolate chip cookie dough balls onto an air fryer basket lined with parchment paper.
  • Make sure the cookies are spaced out evenly on the sheet.
  • Air fry for 7-8 minutes, or until golden brown.
  • Allow at least 10 minutes for the cookies to cool before attempting to remove them from the basket so that they become firm. If you remove them while they are still soft, they will break apart.
  • Remove from the air fryer and let cool on a cooling rack or a wire rack.
  • When the cookies have crispy edges, they are ready for storage.

Notes

  • Do not overcrowd the air fryer basket. This will make the cookies cook evenly.
  • If you want softer cookies, bake for less time. If you want crispier cookies, bake for a few minutes longer.
  • Let the cookies cool before removing them from the air fryer so they become firm and do not break apart.
  • Do not over-mix the dough, or the cookies will be tough.
  • Store the leftover cooking dough in the fridge for later use.
