Sprouted Quinoa Tomato SoupÂ
Today, I want to share the best version of tomato soup I can think of. One with the tangy taste that we like, along with wholesome goodness of Quinoa.

Servings: 4 -6
- 5-6 medium sized tomatoes
- 2 large carrots
- 1 bay leaf
- 1 small cinnamon stick
- 1 garlic clove
- ½ cup dry sprouted Quinoa trio
- 1 teaspoon pepper corn
- 4-5 cloves
- ½ coconut milk
- 1 cup of chopped cilantro
- Salt to taste
Cook the sprouted Quinoa trio as per the direction of the packet and place it aside.
Place a bowl over medium heat and add all the ingredients listed above except coconut milk and quinoa, one by one.
Cook until they are soft and take the bowl off the heat. Let them cool and blend all together for a creamy consistency.
Place the same bowl over medium heat and add the blended soup back and let it simmer.
Add coconut milk and stir well.
Add cooked sprouted Quinoa trio and continue to stir.
Let simmer for 5 minutes.
