Healthy Quinoa Salad

Ingredients

  • ½ cup Quinoa
  • 1 medium sized cucumber
  • 1-2 carrots
  • 10 small tomatoes
  • ½ cup canned black beans
  • Pink salt
  • 1 teaspoon ground black pepper
  • Salad dressing :
  • 2 tablespoon lemon juice
  • 2 teaspoon olive oil
  • 2 teaspoon red chili flakes
  • 4 mint leaves finely chopped

Instructions

  • Place a 3 cups of water over medium heat and add the washed and drained Quinoa.
  • Cook for 15 minutes or until they are tender.
  • Now chop all the veggies in your preferred sizes and place aside.
  • To prepare the dressing: Whisk the lemon Juice with olive oil, chopped mint leaves, red chili flakes and salt.
  • Mix the veggies and quinoa with the dressing and stir well.
