- ½ cup Quinoa
- 1 medium sized cucumber
- 1-2 carrots
- 10 small tomatoes
- ½ cup canned black beans
- Pink salt
- 1 teaspoon ground black pepper
- Salad dressing :
- 2 tablespoon lemon juice
- 2 teaspoon olive oil
- 2 teaspoon red chili flakes
- 4 mint leaves finely chopped
Place a 3 cups of water over medium heat and add the washed and drained Quinoa.
Cook for 15 minutes or until they are tender.
Now chop all the veggies in your preferred sizes and place aside.
To prepare the dressing: Whisk the lemon Juice with olive oil, chopped mint leaves, red chili flakes and salt.
Mix the veggies and quinoa with the dressing and stir well.
