Akki Shavige Recipe

Rice Noodles or Akki Shavige can be eaten hot or cold and goes very well with coconut-based curry (recipe to follow) or with any Indian pickle too.

Ingredients

  • 2 cups Idli Rice or Long Grain
  • Salt to taste

Instructions

  • Let the rice soak in water for at least 4 hours.
  • Strain the rice and blend it with 2 cups water and bring it to a consistency of dosa batter. ( add 2 more cups)
  • Add salt to taste.
  • In a medium cook pot, cook the batter until most of the moisture evaporates and the dough becomes thick.
  • Remove off the heat and let it cool down just enough to handle the dough easily.
  • Scoop a handful of the dough and shape them into little balls and steam cook them for about 20 minutes.
  • Check if the dough is evenly cooked (With a toothpick) and continue to steam if they are not cooked completely.
  • Now it time to put the noodle press or "Shavige Mane" or Pasta Maker to work! As you press the dough, set the noodles on a flat plate.
