- 2 zucchini cubed
- 1 yellow squash cubed
- 2 teaspoon olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon black pepper powder
- ¾ teaspoon salt
Preheat your air fryer to 400F (200C). Cut the zucchini and squash into ¼-inch thick cubes or slices.
2 zucchini, 1 yellow squash
Place them in a large bowl and add the olive oil, Italian seasonings, salt, and black pepper. Toss everything together to make sure it's evenly coated.
2 teaspoon olive oil, 1 teaspoon Italian seasoning, ½ teaspoon black pepper powder, ¾ teaspoon salt
Transfer the zucchini and squash to the basket of the air fryer and cook for 10-15 minutes, shaking the basket at halfway point.
The zucchini and squash are done when they're golden brown and lightly crisp on the outside. Serve hot. Enjoy!
- If you place the squash in a single layer in the air fryer, it will cook faster and more evenly.
- If you find that your zucchini and squash are sticking to the air fryer basket, lightly spray them with oil before cooking. This should help ensure they don't stick.
- Summer squash has a water content that can make air-fried vegetables soggy. To help reduce the water content, use a paper towel to pat dry the chopped squash before adding the oil and seasonings.
- Sprinkle a few red pepper flakes if you prefer a little heat in your side dish.
