Air Fryer Roasted Beets

  • 4 beets or 3 cups chopped
  • 1 cup red onion chopped
  • 1 teaspoon black pepper powder
  • 3 teaspoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon sabji masala if you desired

Instructions

  • Preheat the air fryer to 400 degrees F
  • Wash and peel the fresh beets with a vegetable peeler. Cut them into small 1-inch pieces.
  • In a large bowl, mix together the beet cubes, onion, black pepper, sabji masala powder, and salt.

  • Spray the air fryer basket with cooking spray. Add the beet mixture to the basket in a single layer. Cook for 15 minutes, stirring once halfway through.

  • After the timer expires, spread the beets on a baking sheet or plate to let them cool a little.
  • Air fryer beets are ready! Serve immediately. Enjoy!

Notes

  • Try roasting other root vegetables in the air fryer like carrots, potatoes, and sweet potatoes.
  • Add some freshly squeezed lemon juice over the beets for an extra zesty flavor. This can be a great side dish for curries.
  • You want them to cook faster than this first pressure cook for 2 minutes. then chop them and place them inside the air fryer.
  • For a crispy texture, cook the beets for 20 minutes in the air fryer.
  • Do not overcrowd the air fryer basket. This will make the beets cook evenly.
  • If you want to make a larger batch, cook the beets in batches.
  • Store them in an airtight container to keep them fresh for a longer timeframe.
