Instant Pot  Best Vegetable Kurma


You will need vegetables, cashew nuts, whole spices, ginger, and chili and turmeric powder.

Step 1

Prepare Kurma Sauce or paste: For this you need tomatoes, whole spices and soaked cashews.

Press saute button and add oil and bay leaf.

Add chopped and drained potatoes and sauté for 1 minute.

Add the prepared sauce and mix well. Add mixed vegetables, salt, and 2 cups of water and stir well.

Close the Instant pot with the lid and cook for a minute on high pressure.

Open the lid and add coconut milk and chopped cilantro. Give a nice stir, and your vegan Instant Pot vegetable korma is ready to enjoy!
