Indian Eggplant Masala

In this recipe, I will walk you through a step-by-step process to make delicious eggplant curry.

Use fresh ingredients - especially Eggplants

Sauté eggplants with oil until its brown.

Sauté remaining ingredients.

Add cumin seeds and mustard seeds and let them sizzle.

Add onions

Add chopped garlic and onions and cook until they turn golden brown.

Add tomatoes

Add the chopped tomatoes or tomato puree and the spice mix.

Mix everything

Add the sauteed eggplants to the pan and mix well with the tomato mixture. Cook for an additional 5 minutes on low heat

Serve hot

Garnish with freshly chopped coriander leaves before serving. Enjoy your Eggplant Masala with rice or naan bread.
